Should I cover food that is cooling?
Food must be cooled from 135F to 70F within 2 hours, then from 70F to 41F within the next 4 hours. It is equally important that we protect food from contamination. Loosely cover food containers before storing them or food can be left uncovered, if stored in a way that prevents contamination. Uncovered containers should be stored above other types of food, especially raw seafood, meat, and poultry. Also, protect it from other types of environmental contaminants, such as dirty fans, ceiling, walls etc.
